Ingredients

1 packet digestive biscuits, crushed

1/4 cup melted butter

For the Filling:

1 tin condensed milk

1/2 cup fresh lemon juice

Zest of 1 lemon

3 large egg yolks

For the Topping:

1 cup heavy whipping cream

2 tablespoons powdered sugar

1/2 teaspoon vanilla extract

Instructions

Prepare the Crust:

Preheat your oven to 350°F (175°C).

In a medium bowl, combine the crushed digestive biscuits with melted butter until the mixture resembles wet sand.

Press the mixture firmly into the bottom and up the sides of a 9-inch tart pan.

Bake for 10 minutes, then let it cool completely.

Make the Filling:

In a mixing bowl, whisk together the condensed milk, lemon juice, lemon zest, and egg yolks until smooth and well combined.

Pour the filling into the cooled crust.

Bake the Tart:

Reduce the oven temperature to 325°F (165°C).
