Beef and Vegetable Meatloaf Muffins

Directions:

1. Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
2. In a large bowl, combine the ground beef, carrot, onion, zucchini, parsley, breadcrumbs, egg, milk, olive oil, garlic powder, paprika, oregano, salt, and pepper.
3. Mix gently with your hands or a spoon until all ingredients are evenly combined, but avoid overmixing to keep the meat tender.
4. Divide the mixture evenly among the muffin tin cups, pressing lightly to shape.
5. Bake for 20-25 minutes, or until the meat is cooked through and the tops are slightly browned.
6. Let rest for 5 minutes before carefully removing from the muffin tin.
7. Serve warm with your favorite sides or dipping sauce.
