Basque Burnt Cheesecake

Directions:

1. Preheat oven to 400°F (200°C). Line a 10-inch springform pan with parchment paper, making sure it comes up the sides for a rustic look.
2. In a large mixing bowl, beat cream cheese and sugar until smooth and creamy.
3. Add eggs one at a time, beating well after each addition.
4. Pour in the heavy cream and mix until fully incorporated.
5. Sift in the flour, add vanilla extract and salt, then mix until smooth and lump-free.
6. Pour the batter into the prepared pan and smooth the top with a spatula.
7. Bake for 50-60 minutes, or until the top is deeply caramelized and the center is slightly jiggly.
8. Let cool completely at room temperature, then refrigerate for at least 4 hours before slicing.
9. Serve chilled or at room temperature for a silky, melt-in-your-mouth experience.
